I think this meal is the definition of a quick and stress-free meal that can be thrown together after work.  I’m not even sure where I first found this recipe, but I would not be surprised if it was something out of Rachael Ray’s 30 Minute Meals.  It is that easy!

It is also delicious and customizable to what’s in your refrigerator.  You can substitute ground beef or diced chicken for the sausage.  You can use goat cheese or Parmesan instead of boccocino.  Anything can be done, really, since once you get down to it, this is just pasta with tomato sauce and that’s why I like it.

Here is the recipe to help you get your proportions right:

Boccocino and Sausage Pasta
Servings:  2

2 fresh Hot Italian Pork Sausages, casings removed
2 tablespoon olive oil
1/2 cup chopped yellow onion
1 can whole peeled tomatoes, 14.5 oz.
1 tablespoon tomato paste
1/8 teaspoon chili flakes
1/8 teaspoon cinnamon
Salt and Pepper to taste
2 tablespoon black and green olives, chopped
1/2 cup boccaccino mozzarella, cut in half
1/4 cup chopped basil, in strips
1/2 lb. spaghetti

Directions:

Prepare noodles according to package instructions until al dente.

Heat a large skillet over medium high heat and add 1 tablespoon olive oil.  Add sausage and cook until brown, crumbling it to small pieces.  Remove to plate.

Add  tbsp. of olive oil to skillet.  When oil is hot, add onions and saute until translucent and slightly carmelized.

Add the tomatoes and break them up. Add the tomato paste and continue to stir. Add chili flakes and cinnamon, then add salt and peper to taste.

Add the sausage, olives, and noodles to skillet and mix.  Just before serving, stir in the bocconccino and basil.  Plate and serve.
